Christmas in a Cookie
These festive cookies are awesome all year!
Winter break provides the perfect opportunity to make a sweet treat to celebrate the season. As the snow starts to fall on the ground and you find yourself spending more time inside, baking is a great way to have fun and stay warm.
My favorite winter treats are all things peppermint-related, and I was so happy when I stumbled upon a recipe for chocolate peppermint cookies a couple of years ago. Since then, I have been making these cookies every year with my family and would definitely recommend trying them out!
Ingredients:
- 1 ½ sticks unsalted butter, room temperature
- ¾ cup granulated sugar
- ¼ cup brown sugar
- 2 eggs, room temperature
- ½ tsp peppermint extract
- 1 ½ cups flour
- ½ cup unsweetened cocoa powder
- 1 ¼ tsp baking powder
- ⅛ tsp salt
- ½ cup white chocolate chips
- ½ cup peppermint crunch baking chips
Recipe Instructions:
- Preheat your oven to 350 degrees Fahrenheit.
- Combine the butter, granulated sugar, and brown sugar together in a bowl; mix the ingredients together.
- Add the eggs and the peppermint extract to the bowl and mix thoroughly.
- In another bowl, mix together the remaining dry ingredients, including the flour, cocoa powder, baking powder and salt.
- Combine the dry and wet ingredients and mix all the ingredients together.
- Add the peppermint crunch chips and the white chocolate chips to the cookie dough.
- Distribute the cookie dough evenly onto a lined baking sheet.
- Bake the cookies for 12 minutes.
- Cool the cookies.
