Thanksgiving in a (Pumpkin) Bite

As the weather turns colder and the leaves begin to drift off their branches, November ushers in one of the most iconic holidays: Thanksgiving. This holiday is a wonderful time to celebrate what we feel grateful for and reunite with family over shared food and lively conversation. However, the holiday also causes a lot of work for many hosts who hope to prepare a wonderful spread.
If you’re looking to sweeten up your Thanksgiving menu with an easy-to-make and delicious treat, you must try these pumpkin bites! This dessert is certainly popular at my house as a Turkey Day favorite and I even get requests to make it all year round. The recipe is very simple to follow and is quick to prepare. I hope you enjoy these pumpkin bites!
Ingredients:
- ½ cup butter, softened
- ½ cup brown sugar
- 1 cup all-purpose flour
- ½ cup rolled oats
- 2 eggs
- ¾ cup white sugar
- 1 (15 ounce) can pumpkin
- 1 (12 fluid ounce) can evaporated milk
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground ginger
- ¼ teaspoon ground cloves
Recipe Instructions:
- First, preheat your oven to 350 degrees Fahrenheit
- In a bowl, combine brown sugar and butter
- Add the flour to the bowl and mix well
- Mix in the oats
- Place the mixture in a 9×13 dish and bake in the preheated oven for about 15 minutes
- In a new bowl combine the eggs and the white sugar
- Add pumpkin, evaporated milk, salt, cinnamon, ginger and cloves to the bowl. Mix thoroughly.
- Pour the mixture over the baked crust
- Bake in the preheated oven for 20 minutes
- Let the dessert cool and then cut into squares
- You may garnish with whipped cream or serve plain
